How to Make Strawberry Overnight Oats Jars With Freeze-Dried Fruit

Overnight oats can go flat fast if all the berry flavor comes from a spoonful of jam or a few chopped fresh strawberries that disappear by morning. Freeze-dried strawberries fix that problem neatly. They bring concentrated fruit flavor, a cleaner pink color, and a little texture control depending on when you stir them in.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 cup milk of choice
  • 1/2 cup Greek yogurt
  • 1 tablespoon chia seeds
  • 1 to 2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/3 cup lightly crushed freeze-dried strawberries, plus more for topping
  • Small pinch of salt

Method

1. Mix the oat base.

In a bowl, stir together the oats, milk, Greek yogurt, chia seeds, sweetener, vanilla, and salt until there are no dry pockets of oats hiding at the bottom.

2. Add the first layer of berry flavor.

Crush the freeze-dried strawberries with your hands or the back of a spoon until you have a mix of flakes and small pieces. Stir most of them into the oat base. This gives the jars a strawberry-throughout flavor instead of a few random berry hits.

3. Jar and chill.

Divide the mixture between two jars, cover, and refrigerate for at least 6 hours or overnight. The oats should look thickened but still spoonable, not cement-like.

4. Finish before eating.

Top each jar with the reserved freeze-dried strawberries right before serving. If you like, add a dollop of yogurt or a spoonful of sliced fresh strawberries, but the crunchy topper is what keeps the whole thing lively.

Texture notes that make the jars better

If your overnight oats usually end up heavy, pull back slightly on the chia seeds or add a splash more milk in the morning. The freeze-dried fruit will absorb a little moisture overnight, which is useful for flavor but worth accounting for.

You can also split the berries two ways: some crushed fine for a pinker base, some left in bigger shards for a more obvious fruit bite. That small change makes the jar feel less one-note.
